Ingredients

(Makes 15-16 palappam)
Rice flour / Puttu podi / Idiyappam podi / Pathiri podi – 1¼ cup
Grated coconut – 2½ handfuls / ¾ cup
Cooked rice – ½ cup
Sugar – 1 tbsp
Curd / Yogurt – 3 tbsp
Salt – 1 tsp
Steps

Add rice flour, cooked rice, grated coconut and curd to a mixie jar and pulse a couple of times adding 1 cup water.
Add 1 more cup water to loosen the batter. The consistency should be that of the dosa batter.
Add sugar and salt. Mix well.
Cover and keep the batter aside in a warm spot overnight or for 6-8 hours for fermentation.
Heat the appachatti or a pan.
Pour a ladle of batter on high heat and swirl the pan.
Cover and cook on medium heat once the bubbles are formed.
Remember to mix the batter well each time you pour the batter.
