Karakkappam

This snack goes back a long way. It’s one of malabar’s favourite snack & can be stored for days to munch on anytime we want. This recipe has been passed down for centuries. Although making this takes time, but it’s worth the work.

3 cup sugar
5 eggs
3/4 cup rava
4 3/4 cup maida
5,6 cardamom
1/4 cup ghee
Salt.

Mix eggs,sugar & cardamom and melt it.Water shouldn’t be added to this.Once it’s melted, Add Rava and mix for 10-15 mins & keep it aside.We’re doing this to soak the rava.Later on, Add salt, mix & then Add necessary maida & ghee and knead it.
4 3/4 cup maida was used here.
The dough shouldn’t be too lose or too hard.
After kneading, roll it out & keep it aside.
Then you can roll it out on a fork, so you get a design.
Once you’re done, fry it in oil on a low flame.
