1.brinjal – 4 nos
2.coconut – 1/2 cup
3.curd – 1/2 cup
4.red chilli powder – 1 tbsp
5.turmeric powder – 1/4 tbsp
6.cumin seeds – 1/2 tbsp
7.salt – as required
8.asafoetida – 1 pinch
9.mustard seeds – 1/4 tbsp
10.coconut oil- 4 tbsp
11.ciriander leaves
Cut the brinjal into thin slices and add salt, turmeric powder, red chilli powder and mix well.Heat 1.5 tbsp oil and fry the brinjal untill it turns crispy.Grind coconut, mustard seeds, red chilli powder along with 3 tbsp water.Add whisked curd into the coconut paste.And add salt and mix well.Add fried brinjal into it.heat oil and add cumin seeds and a pinch asafoetida and red chilli powder and pour to the gravy.Finally add chopped coriander leaves.
